Its differential properties are based on the fermentation of xylose, lactose, and sucrose, decarboxylation of lysine, and production of hydrogen sulfide, which aids in the primary differentiation of salmonella and shigella. When sugar undergoes fermentation, it results in a decrease in pH, which is indicated by a change in colour of the phenol red indicator to yellow. The majority of gut bacteria, including Salmonella, have the ability to ferment xylose sugar, generating acid.
