The test is based on the principle that reducing sugars when heated in the presence of an alkali, are converted to powerful reducing species known as enediols. These enediols reduce the cupric compounds present in the Benedict's reagent to cuprous compounds which are precipitated as insoluble red copper (I) oxide (Cu2O).
