It is present in many fruits, vegetables and herbs. It is considered to be a fibre as it is not absorbed in the gastrointestinal tract. Inulin is a fructan and is used as a sweetener in many food items. Inulin is the gold standard for measuring kidney function. It is found in more than 36,000 species of plants including Jerusalem artichoke, banana, wheat, garlic and chicory. It is used as an energy reserve and as a regular for cold resistance by plants. Because of its solubility in water it also acts as an osmoregulatory. The osmotic potential in the cells of plants can be changed by the change in the degree of polymerization in inulin by hydrolysis. A change in the osmotic potential without the actual change in amount of carbohydrates provides resistance for plants against cold and draught. It is widely used in processed food as flavouring agent as it ranges from bland to sweet taste. It is known to increase the absorption of calcium and magnesium and it also promotes intestinal bacterial growth.
